Chris Thomson has 8 years experience in chocolate panning. Chris trained at Melbourne's prestigious William Angliss School of confectionery where he completed training in chocolate and hard sugar panning in 2005.

How does contract coating work?
Customer supplies centres - ie Macadamia kernals 10kg
Select Chocolate make, composition and chocolate coating ratio - ie Nestle 63% at 3:1
We prepare centres, coat centres, polish product and box the product into 10kg quantities
Turnaround time 3-14 days depending on our seasonal workloads.
Give me a costing example?
You supply 10kg of macadamia kernal to be coated in 73% Dark at 3:1 and we quote price for 73% dark at $15.50
30kg of chocolate will be added to 10kg macadamias. Giving a final product weight of 40kg
Cost is $15.50 x 40kg
Total cost: $620 ex GST
What is the minimum order
Due to the size of our chocolate coating pans we require a minimum of 10kg of centres for most products. Freeze dried strawberries 3kg.
